Small holes run through the base and walls of every slot, letting hot air reach the underside of the dough instead of trapping it in a closed pan. Because liquid batter would drain through those holes, this one is meant for yeast dough. Cafés, snack counters and cloud kitchens serving hot dogs can bake their own buns rather than buying them in.
