The Kitchenary Kart Plastic Black Handle Bend Palette Knife, size 10, has a 25 cm metal blade fixed to a black plastic handle. The extra reach lets a decorator smooth the top of a two-kilo cake or a tall tier with fewer passes, which leaves fewer marks in the cream.

Hotel pastry kitchens and banquet caterers also use this length to spread fillings over square and rectangular cakes and to level buttercream before fondant goes on. The dropped blade stays parallel to the cake while the grip rides above the rim.
